The clay deposits near Yixing have been used to make teapots since the Song Dynasty (960 - 1279). Yixing teapots are considered to be the premier vessel for tea due to their ability to take on the flavour of the tea over time. For this reason, Yixing teapots are often used to brew just one type of tea (black, green or white).
